Healthy Chunky Chocolate Granola

Almost a daily ritual, my morning coffee with healthy chunky granola! I usually have my addictive pistachio granola, but lately, it’s been this healthy and super chunky orange chocolate granola. Ever since I learned this neat trick from Cenk Sonmezsoy’s book, The Artful Baker, of using cooked oatmeal to make granola, and I haven’t looked back. Usually, for crispy granola chunks, you need more oil and/or liquid sweetener. This method, however, gives you super chunky and crunchy granola with relatively less oil and sweetener.
Before I tell you more about the recipe, let me just wholeheartedly recommend Cenk’s book for any of you that love to bake like me. It’s a treasure of delicious desserts with some bread recipes thrown in. His Orange Poppy Seed Pound Cake is worth the price of the book! And if you’re a sourdough enthusiast, then his Sourdough Simit recipe is a must.

Now back to the chunky healthy granola recipe…

I didn’t add “orange” to the title as I am well aware that most of you might not be keen on that. But I encourage you to give it a try. The combination of orange and chocolate is a classic. However, if you are not convinced just leave both the juice and zest out, using water to replace the juice.
Granola recipes are quite adaptable as long as you keep the ratio of dry to liquid ingredients the same.
For example, if you don’t have coconut oil then you can use extra-virgin olive oil. If you don’t have coconut flakes, use more almond. If you want to use chopped almonds or another type of nut, then stick to the weight measurement instead of cups since they are heavier for the same volume.
If you don’t want chocolate…what are you doing reading this post? Just kidding. But if you make this granola with chocolate and want to try it without next time, just leave out the cacao powder and cacao nibs. Speaking of cacao nibs, you can also leave them out if you don’t have any…they are just nice to add more chocolate flavor.
 
The quantity of cacao powder is up to you, depends how much chocolate flavor you would like. However, if you are using raw cacao then 3 tablespoons should be enough.
 
As for the sweeteners…coconut sugar can be replaced by date sugar or brown sugar. And honey or agave are both good alternatives for the maple syrup.
 

 

Healthy Chunky Chocolate Granola

Ingredients:

3 cups (300g) rolled oats
1 cup (85g) almonds falkes
1/2 cup (35g) coconut flakes
1/2 cup (80g) seeds (hemp, sunflower, pumpkin)
3-4 tablespoons cacao powder
2 tablespoons cacao nibs (optional)
1 teaspoon cinnamon
1 cup (240ml) freshly squeezed orange juice (or water)
2/3 cup (120g) coconut sugar
1/4 cup maple syrup
1/4 cup coconut oil
1 teaspoon orange zest (optional)
1 teaspoon vanilla extract
1/2 teaspoon salt


Instructions:

1. Pre-heat the oven to 325F or 160C.
2. In a large bowl mix together the oats, almonds, coconut flakes, seeds, cacao powder, cacao nibs and cinnamon.
3. In a small saucepan, add the remaining 1/2 cup oats and orange juice. Simmer for 5-7minutes until creamy, stirring frequently. Add the sugar, maple syrup, coconut oil, orange zest if using, vanilla and salt. Stir for about 1 minute until the sugar dissolves and everything is nicely combined.
4. Remove the saucepan from the heat and pour over the dry mixture, stirring to incorporate. Once it’s cool enough to use your hands, get in their to make sure the wet mixture has been mixed well.
5. Transfer the mixture to a large baking sheet (no need to line it), and spread it out as evenly as possible. It will be approximately 0.5cm thick and about 28cm width x 38cm length. Try to keep the edges slightly thicker than the middle.
6. Bake for 30 minutes. Take it out and using a metal spatula flip the outer edges all around as they bake faster. About 5 cm in. Return to the oven to bake for 15 minutes. Take it out again this time flipping all the granola over as best you can. Return to the oven for 10-15 minutes longer until the chunks start to crisp up and turn a dark brown.
7. Let cool completely on the baking sheet before breaking into chunks and storing in an airtight container.

      عندنا منتاجات خالية من الغلوتبن لكن المطبخ غير خالي من الغلويتن
      منتجاتنا لا تصلح للذين عندهم حساسية قوية او سيلياك

    لو سمحت اروى انا بحاول ااعلق علة وصفة كوكيز التمر لا يوجد زر اترك تعليق
    لان عملته دلوقت وخليته بالفرن حوال 12 دقيقة ولكن طري لسه هل ما اخرجه من الفرن هينشف شويه ويتماسك ولا المفروضيتماسك في الفرن وبعدين اخرجه ؟

    سؤال يا أروى لو سمحت انا عاوزاها تبقى مسكرة شويه هل د اقلل كميه الكاكاو وازود دقيق اللوز ولا اخلي المكونات زي ما هي وازود سكر القصب لان لو زود التمر هتبقى سائلة اوي ؟
