This cashew butter is a life saver for the times I’ve gone on a sugar-free cleanse. A tablespoon accompanied by a cup of roiboos vanilla tea nips those sugar cravings in the bud! My daughter also loves dates stuffed with this cashew butter…the perfect snack for a teenager! And here are other ways I love having cashew butter…
Spread on toast with sliced bananas, cocoa nibs and a drizzle of honey.
Mixed with honey and cinnamon for a “Lotus” spread flavor.

1 tsp vanilla powder or paste or 2 tsp vanilla extract
Instructions:
Pre-heat the oven to 350F or 160C and roast the cashews for 8-10 minutes until golden and fragrant. Let cool for a few minutes.
Transfer the cooled cashews to a food processor. Blend for about 8 minutes until you have a smooth butter. Along the way you may get a bowl of dough forming. Stop the machine, break it up and then continue blending until you get a lovely smooth butter.
Transfer to a jar and store in the fridge. Should keep for at least 1 month.
