Can you keep a secret? Make this and see if anyone can taste the secret ingredient that adds creaminess and a good dose of extra nutrition, with very little flavor. And if they can’t tell what it is, let’s keep the secret between us.
The secret ingredient is cauliflower!
It’s great if your child refuses to eat their veggies, because they will think they are having a milk shake instead. I freeze them in ice lolly silicone molds and Noura has it for breakfast or asks for one as a mid-afternoon snack.
A few notes on the ingredients:
You can play around with the ratio of the banana to cauliflower to your liking. Just make sure your banana is ripe!
Cauliflower has to be frozen, but it’s up to you if you want to freeze it raw or steam it first before freezing. It won’t effect the taste or the texture.
I liked adding some peanut butter powder for that classic peanut butter chocolate flavor and it helps the cauliflower taste to disappear completely.
I chose to use date paste and maple syrup to sweeten the smoothie, however if you plan on using a vanilla protein powder you may not need to use anything to sweeten.
To make date paste all you need to do is soak some pitted dates in hot water until completely soft, and then blend the dates with a little of the soaking liquid to get a paste.
Maca powder is a superfood that adds a nice taste to any smoothie, but you can certainly leave it out if you don’t have any.
As for the milk, I love oat milk, but you can use whichever milk you like best. Add more milk if you would like to drink the smoothie as apposed to have it in a bowl.
Place all the ingredients in a blender or food processor (except the toppings duh!) and blend until smooth, adding more milk as needed. Taste and check if you need to add anything to make it more to your taste.
Pour and enjoy as is! Or transfer to the prettiest bowl you have and decorate with your favorite toppings.
