These are very simple cake-y brownies with basic ingredients you can find in most supermarkets. I try to usually health-ify desserts, but with this one I just wanted to make it easy to make for those of you who are vegan or have intolerances to dairy or eggs. If you don’t have coconut oil, feel free to use any other vegetable oil.
Feel free to add chocolate chips or nuts to the batter before baking….or even sprinkled on top will be pretty. You can also make them more decadent by spreading on some chocolate ganache. They are slightly sweeter than your average brownie, so feel free to add a couple of tablespoons more sugar if you want them sweeter.

Pre-heat the oven to 350F or 160C. Line a 20cm square pan with parchment paper.
In a large bowl, sift together the flour, cocoa powder, baking soda and salt.
In another bowl, whisk together the milk and vinegar until frothy. Add in the sugar, oil and vanilla.
Gradually pour the wet ingredients into the flour mixture, and fold together until batter is smooth.
Transfer the batter to the prepared pan. Place on a baking sheet and bake for about 20-25 minutes. You want the sides to be dry but the centre still a little gooey.
Cool on a rack then place in the fridge to firm up. Slice into squares and enjoy!

What if I can’t find whole wheat pastry flour?

You can use regular whole wheat flour, just reduce it by 1 tablespoon and add 1 T cornstarch to lighten it. If you have arrowroot that also works.
