Cashew Coconut Acai Bowl

My love affair with smoothie bowls has been going on for some time now and I’m very much still in the honeymoon phase. I don’t get tired of the different ways they can be enjoyed…on their own, with toppings, as a filling for granola cups…for breakfast or afternoon snack…and now that’s it’s Ramadan, for suhoor. Actually at Crumbs smoothie bowl orders peek during Ramadan.
Here’s another recipe that uses the versatile and delicious Vanilla Cashew Pudding cubes….I recommend always have some in your freezer to add to smoothie bowls, nice cream, smoothies and protein shakes.

 

Cashew Coconut Acai Bowl

| servings: Serves 1 as a meal or 2 as a snack

Ingredients:
Smoothie Bowl:
  • 4-5 vanilla cashew pudding cubes
  • 1 cup frozen banana chunks
  • 1/2 cup frozen berries of your choice
  • 1 tbsp acai powder
  • Non-Dairy milk of choice
Topping suggestions:
  • Sliced fresh fruit like mango, strawberries, kiwi
  • Granola
  • Bee Pollen
  • Cocoa Nibs
  • Coconut Flakes

Instructions:
  1. Place all the ingredients in a blender or small food processor. Add enough milk just to get the ingredients to start blending. The less milk you add, the thicker and creamier it would be.
  2. Once all the ingredients are blended, pour your beautiful creation into the prettiest bowl you have.
  3. Garnish with as many toppings you can handle, or serve in a granola cup.
