Caramelized Onions

Onions turn into magic when caramelized. They are made of 90% carbs and high in sugars, which means when cooked for a long time they release those sugars, and that’s a good thing! They taste so sweet and pair well with many most savory foods, adding umami flavors to the meal.

Find below the simple method to caramelize onions, and ideas of how to enjoy them.

On Toast

Try as a topping for virtually any savory way you enjoy your toast. As pictured above I added vegan cream cheese (you can use labneh for example) to lovely toasted sourdough bread, with roasted beetroot and fresh herbs. If you like mashed avocado or hummus on your toast, caramelized onion would go perfectly.

Grilled Cheese

Adding caramelized onions to a grilled cheese is a must! Whether you are using regular or dairy-free cheese, it will really make the sandwich extra special.

With Eggs

Any type of eggs will go with caramelized onions. As a side to your eggs, mixed in with scrambled eggs, in an omelet, or as pictured on toast with a fried egg and sprinkle of parmesan cheese.

On Crackers

Or as part of a charcuterie board. They are amazing on crackers with a slice of brie or mature cheddar. But also with cold cuts if you’re not vegetarian.

With Greens

Sautéed greens such as kale, collard, spinach, or dandelion greens are amazing with some caramelized onions! Sprinkle some cumin after sautéing and a squeeze of lemon juice.

Other Ideas

Mixed into some quinoa or rice.

A topping for pizza.

In a salad with some lentils or beans.

Caramelized Onions

Ingredients:

2 medium white or yellow onions, sliced

1 tablespoon olive oil

pinch of salt

Instructions:

  1. Heat the oil on medium then add the sliced onions and a pinch of salt. Stir to coat the onions in oil and salt, then leave it without stirring until the bottom onions start to turn brown. Stir to turn the onions and move them around, then again don’t stir for a few minutes to brown the bottom. Repeat until all the onions are browned. Reduce the heat to low and stir the onions frequently for 20-30 minutes until they reach the desired caramelization.
  2. Use straight away or let cool completely and store in an airtight container in the fridge for 5 days.
