Chocolate Banana Oatmeal Bake

When I was studying in university in London, I stayed in the dorms in my first year, and oatmeal was one of the very few foods I liked eating at the dorms. Of course it was loaded with sugar, and that’s probably why I liked it. But also because it was so warm and comforting.

And that’s why I don’t care much for overnight oats. For me, oatmeal needs to be super creamy and hot. My favorite oatmeal is steel-cut oats soaked in vanilla almond milk overnight and then baked with lots of cinnamon, before topping it with berries and a drizzle of honey.

Now this is my first version of baked oatmeal, and you can’t go wrong with the classic combo of banana and chocolate. For more flavor and some crunch I’ve included coconut flakes and cocoa nibs, some peanut butter for extra protein, and maca powder for a superfood boost. I’ve topped it with a couple of tablespoons of chocolate pudding to turn it into more of a dessert than breakfast, but that’s totally optional.

Ingredients: 
1/3 cup dairy-free milk
1 tbsp cocoa powder
1 tbsp honey
1 tbsp peanut butter
1/3 cup rolled oats
2 tbsp coconut flakes
pinch of salt
1 tsp maca powder
1 small banana
1 tsp coconut sugar
1 tsp cocoa nibs
2 tbsp chocolate pudding (optional)

Instructions: 
  1. Pre-heat the oven to 350F or 160C. Brush a single portion baking dish with some coconut oil and set aside.
  2. Whisk together the milk with the cocoa powder, honey, and peanut butter.
  3. In a small bowl mix the oats with the coconut flakes, salt, and maca. Fold in the slides bananas. Add the chocolate milk into the oat mixture and stir well.
  4. Pour the oatmeal into the baking dish. Sprinkle coconut sugar and nibs on top. Bake for 15-20 minutes.
  5. Serve as is, or dollop on the chocolate pudding for more chocolate decadence.
