I don’t drink milk with cereal, and mostly drink my tea black. However if I’m in the mood for a latte at home, chai or coffee, this milk tastes and froths up perfectly. I also love using this milk to make oatmeal.
The leftover pulp is never wasted. I dry it in the dehydrator (you can also use the oven for 1 hour on low) and grind it to make almond flour.
Soaking the nuts is essential even if you have a high speed blender. And for a smooth milk with no bits, straining it is also important. If you don’t have a nut milk bag, you can use a clean ‘qutra’ or similar fabric.

Ingredients:
1 cup raw almonds
3-4 cups filtered water
4 dates
1/2 teaspoon salt
1/2 teaspoon vanilla
Instructions:
Soak almonds in water for 8 hours or overnight.
Drain and place in a blender with the rest of the ingredients.
If you want the milk to be more creamy use less water.
Blend for about a minute. Strain using a cheesecloth or nut milk bag.
