The SkinnyTaste Cookbook by Gina Homolka of SkinnyTaste website is the type of book that every home cook should have. There is something in there for everyone. Whether a vegetarian or a carnivore, a picky eater or the adventurous type, the beginner or the experienced cook, you will find something you will love and make again and again.
Some of her recipes have become a staple in my home. The Broccoli Mac & Cheese is my kid’s favorite that we make every Sunday night for dinner. My husband likes the veggie fried rice with the addition of some chicken, while the kids and I enjoy it with sir-fried broccoli and baby corn with teriyaki sauce. My absolute favorite if I want a grain-free light salad is her house salad, replacing some of the lettuce with kale.
The Quinoa Stuffed Peppers pictured above are absolutely delicious and easy to make. The stuffing is do delicious, if you omit the cheese you won’t miss out. Just add some baby spinach and avocado as pictured above, and you’ll be looking for seconds.
Each recipe lists calories, fat content and other nutritional information. Also most recipes have beautiful photos. My only misgiving is Gina’s inclination to use Low or Non-Fat dairy or egg white instead of whole eggs. But in most recipes this is easily substituted with dairy free milk or the full-fat version.
I’ve tagged so many recipes in the book, and look forward to trying them soon. Gina’s blog has a wealth of information about healthy living and recipes of course.
