As the years pass and I get older, my love for pizza grows, while the way I like to have it changes. From thick white crust topped with as much cheese as the pizza dough can handle….to thin and crispy, whole-grain and topped with vegetables mostly. The same goes for fatayer…whole-grain, crispy and my favorite fillings are zaater or spinach.
This dough recipe is easy to make, and quite versatile with the type of flour you use. You can make pizza, flatbread or mini fatayer as pictured below. Let me know in the comments what you top your dough with, and what type of flour you used.
Whole Grain Pizza & Fatayer Dough

Ingredients:
2 1/2 cups whole-grain flour of your choice or a mix (whole-wheat, spelt, khorasan, rye)
1 tsp baking powder
1/2 tsp salt
1 tbsp instant dried yeast
2/3 cup warm water
1 tbsp honey
3 tbsp olive oil
Instructions:
Add the yeast to the warm water and set aside to dissolve.
Mix together the flour with the baking powder and salt.
Add the yeast and water mixture to the flour followed by the honey and oil. Stir until the dough starts to come together.
Transfer to a lightly floured work surface. Kneed just until a ball of dough forms.
Transfer to a lightly oiled bowl. Cover with plastic wrap and set aside in a warm place until doubled in size, about 1 hour.
Shape the dough into 2 medium pizzas, or about 1 dozen fatayer, adding your favorite toppings.
